Happy holidays without pumpkin pie? Impossible! Here's my favorite recipe--super simple and always a big hit at family gatherings.
EASY CRUSTLESS PUMPKIN PIE
3/4 cup sugar
1/2 cup Bisquik
2 tablespoons margarine
1 can (12 oz) evaporated milk
2 eggs
1 can (16 oz) pumpkin
2 1/2 teaspoons pumpkin pie spice
2 teaspoons vanilla
Mix in blender 1 minute on high. Pour into 1 greased 10 inch deep dish or two 9 inch pie plates. Bake at 350 degrees
for 50-55 minutes.
